Coconut Chutney( Fasting recipe)

 (Makes approx. 1 cup)

Coconut also supports the immune system, and is trans fat free, besides being Gluten free!
Another lesser known fact is that it is actually used by the body to produce energy instantly, instead of being saved in the fat reservoirs! 
So go ahead and indulge in the creamy nutty goodness of this chutney, and you will go on asking for more!

Prep-
Fresh Coconut, diced- 1 cup
Coriander leaves- 1/4 cup
Green chillies, chopped- 1/2 tbsp.
Fresh curd- 1/4 cup
Peanuts- 2 tbsp.
Rock salt- to taste
Tempering-
Oil- 1 tsp.
Cumin seeds- 1/2 tsp.
Curry leaves- 2-3 leaves

Whip it up
Dry roast the peanuts, and keep aside.
Mix with the remaining ingredients and pulse in a grinder till smooth.
For tempering, heat oil in a tempering spoon, crackle the cumin seeds, and add curry leaves after turning the flame off.
Mix the tempering in the chutney.
Perfect to be eaten with sago croquettes, sabudana khichdi, and anything else!
